Tech Tip Tuesday: How AI Helped Me Meal Prep Like a Pro (And Still Sell Beach Houses!)

In the hustle and bustle of real estate, especially here on the Bolivar Peninsula, meal prep isn’t always at the top of my priority list. Between showings, community events, and helping clients find their dream beach home, it’s easy to fall into the “grab something quick” trap.

But this week? Something changed.

Thanks to a little nudge from my daughter (who’s much more tech-savvy than I like to admit), I gave AI a try to help plan out my meals—and it honestly blew me away. Not only did it help me eat better and stay energized, it actually saved me time and money.

So I’m sharing my AI-generated grocery list and healthy recipes, all based on sale items from The Big Store in Crystal Beach, in case you want to give it a try too!

🥗 Healthy Meal Prep Recipes (That Actually Taste Good!)

1. Spinach & Bell Pepper Egg Muffins
Perfect for busy mornings on the go.
Ingredients: 8 eggs, 1 cup chopped spinach, 1 bell pepper, salt & pepper
Prep: Mix and pour into a muffin tin. Bake at 350°F for 20 minutes. Store in fridge.

2. Overnight Oats with Blueberries & Almond Butter
A no-fuss breakfast you can make in bulk.
Ingredients: ½ cup oats, ½ cup almond milk, 1 tbsp almond butter, ¼ cup blueberries
Prep: Combine in jars and chill overnight.

3. Grilled Chicken Quinoa Bowls
My go-to lunch—clean, simple, and satisfying.
Ingredients: Grilled chicken, quinoa, roasted broccoli, ½ avocado, hummus
Prep: Assemble in containers and store.

4. Ground Turkey & Sweet Potato Skillet
A great make-ahead dinner or hearty lunch.
Ingredients: Ground turkey, diced sweet potatoes, bell pepper, onion, garlic, paprika
Prep: Sauté until cooked through, portion into containers.

5. Baked Salmon with Rice & Broccoli
Quick and elegant!
Ingredients: Salmon, brown rice, steamed broccoli, lemon wedges, herbs
Prep: Bake salmon at 375°F for 15–20 minutes. Steam broccoli and prep rice.

6. Black Bean & Quinoa Tacos
A meatless option that’s still full of flavor.
Ingredients: Black beans, quinoa, bell pepper, tortillas, salsa or yogurt
Prep: Warm beans and mix with quinoa and veggies. Serve in tortillas.

Meal prepping with the help of AI has truly made my week smoother. It’s one more example of how we can use technology to make room for what matters most—our families, our clients, and our health.
